Chef Keith from Rational was kind enough to come and do a 4 hour training on how to use our new Combination Oven to save time and money. On the menu for our "New Texas" introduction will be a BBQ Pork Sandwich. This represents the Texas BBQ Belt that has become prevalent over the decades in towns like Tyler, Elgin, Lockhart and Luling. Using the pork the Germans and Czechs were familiar with, Texas took it and added its own flavor profile. BBQ!
Week of November 4, 2024
We are entering a new Flag era here at the High School. This month we are looking at
the "New Texas" era, it covers the Center of Texas, dominated by Austin and the Texas Hill Country. This
is the area that the German and Czech Immigrants came to Texas in the years before and a couple of decades after
the civil war. So, this month there will be entrées that feature the adapted old country traditions, as they settled into a
new home. The Texas BBQ Belt also runs through this area, so we will discover a little bit of Wurst
meets Brisket this month.
AND the iconic Texas dish known as the "Chicken Fried Steak" has its roots in this area.
